Black-eyed Peas Curry Recipe By : Raju Bapi Recipe For: The Brave & The Discerning Serving Size : 4 Preparation Time : 1:30 hrs Categories : Main Dish Indian Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 Cups Dried black-eyed peas -- soaked 5 Cups Water 2 Each Jalapeno peppers -- minced 1 1/2 Cups Chopped Onions 3 small Peeled, chopped Potatoes 2 medium Seeded, chopped Bell peppers (choose your color coordination here!) 1 Tablespoon Grated ginger 1 Tablespoon Minced garlic 1 Each Bay leaf 1 Teaspoon Cumin seeds 2 Tablespoons Chili powder 1/2 Tablespoon Oregano 2 Cups Peeled -- chopped plum tomatos (1 ?oz Can) Salt & pepper -- --------Generously, I suggest--- 1/2 Tablespoon Mustard seeds 1 Tablespoon Turmeric 2 Teaspoons All Spice 2 Teaspoons Garam Masala (THE KEY INGREDIENT!) 6 Tablespoons Vegetable oil (Olive oil ok too) Soak the beans overnight. Drain beans. Place in a large pot & add 5 c water. Bring to a boil. Add Jalapeno peppers, ginger, bay leaf. Cover & simmer for 1/2 hour. Remove from heat & discard bay leaf. In a saucepan, heat 6 Tbs of oil. Add cumin, mustard seeds and when they start popping, add chopped onions and garlic. Fry on medium heat till onions turn transparent, then add potatoes and Bell pepper. Continue frying on medium heat for 10 more minutes. Add the spices and seasonings -- Turmeric, Oregano, chili powder, All Spice, Garam Masala, Salt, Black Pepper. Add the can of tomatoes also and stir the whole mixture and let it sit on medium heat for 5 minutes. Add the beans alongwith the water to the saucepan. Bring to boil and reduce heat & simmer for 30 minutes. Ideal accompaniment to this dish is cooked Basmati rice: ======================================================= Wash 3 cups of basmati (Indian long grain) rice. Add 4 1/2 cups of water, a pich of Turmeric, salt, butter, and 1/2 cup frozen peas. Bring the water to a boil, reduce to low heat and cook it (takes about 1/2 hour). The aroma of the rice when you eat with the beans fills your heart and of course stomach too!
